Cacao on Garyth farm grows in a sustainable agroforestry system, which helps to protect
plant and animal life in the area, including the rich biodiversity of the Tumbes-Chocó-
Magdalena national park. This park is one of the top 25 world biodiversity hotspots and
stretches over 3 countries. While the biodiversity is relatively intact in Colombia and
Peru, it is highly threatened in Ecuador because of deforestation and monoculture
farming. Garyth’s approach to cacao production is a shining example of how well nature and
farming can live together in harmony. As a passionate and knowledgeable organic
farmer, Thomas has introduced various natural systems to protect his trees and crops
from diseases and to stimulate pollination and healthy growth of the cacao pods. In 2019
his hard work was rewarded with organic certification.

Profile
Finca Garyth Nacional cacao has a complex and mild profile dominated by wild
tropical flavors, floral notes, fresh almonds, a vegetal undertone and banana
in the finish. It is remarkably low in chocolaty tones and acidity, making the
flavors speak for themselves. Fermentation is carried out according to strict protocols during 5 to 7 days in a controlled indoor environment in three-tier wooden boxes. The beans are then
dried by warm air coming from a heat inductor – think of big hairdryer. The
machine is fuelled by renewable energy from organic waste materials (palm
husks). The machine sends gusts of hot air through the beans during four to five
days until they reach the right moisture level. Rigorous sorting and selecting
result in clean and homogenous beans.

The Cedeño Aguilar family named their farm Garyth, which is derived from the first letters
of their three sons – Gabriel, Alberto and Ricardo, and their parents, Yolanda and Thomas. At
Garyth all processes from growing and harvesting to fermentation and drying, take place
on the farm. This is why the farm can be called an estate. Yolanda, the family’s matriarch,
operates a small chocolate factory. This gives her the opportunity to test the farm’s crops
first-hand and explore the full potential of the beans. Garyth chocolate bars are for sale all
over Ecuador. Our Supplier firmly believes in the high quality and sustainable approach to
cacao farming of Garyth. To support further growth of the farm our supplier pre-finances its cacao
purchases from Garyth, thereby freeing the necessary capital to expand the cultivation of
organic Nacional cacao.
