The Peru story
Forest
Peru belongs to the most forested countries in the world, over half of Peru is covered in
trees – and a large part of it is an Amazonian tropical forest. No wonder Peru is in the top 10
of most biodiverse countries in the world.
Unfortunately, deforestation and forest degradation are serious issues in Peru, caused by
monoculture farming, mining, road construction and illegal logging.
Because cacao grows in agro-forestry, its cultivation gives farmers the opportunity to
earn an income, while protecting forests and conserving biodiversity. Peru Ucayali cacao
is organically produced and certified; no pesticides or chemical fertilizers are used.

Profile
Peru Ucayali cacao is from Trinitario varieties. Its flavor profile is characterized by a
balanced chocolaty body, low in acidity, with remarkable sweet notes of caramel and
nuts and hints of fruity flavors.
After manual picking the farmers bring the wet cacao beans to a central fermentation
unit. The beans then undergo a strict post-harvesting protocol of 5 days fermentation
in wooden boxes, followed by drying on covered drying beds until the humidity level is
below 7%.

During the last three decades of the 20th century guerrillas of Sendero Luminoso (Lighting
Path) terrorized Ucayali. This was followed by a period of criminal influence, when coca
became an important cash crop. Cooperativa Cacao Aromatico Colpa de Loros was founded
in 2015 with the aim to develop fine cacao cultivation in the area and give farmers an
alternative for coca production. With the help of German development cooperation the
cooperative was able to make rapid progress and invest in good post-harvesting facilities
and protocols and training of farmers. Today, 340 farming family are member of Cooperativa
Cacao Aromatico Colpa de Loros. Peru Ucayali cacao is Fairtrade certified, guaranteeing
farmers a higher price for their cacao – which comes above the premiums received for
quality and organic certification. Together the cooperative members decide on how the
